New Potatoes with Spring Parsley

The following recipe will please all potato-lovers, who like to bring new fresh tastes to their food experimenting.

It is actually an old recipe which I remember from my childchood. My grandmother used to prepare it for Suday lunch together with chicken. It was kind of a ritual.

Many people try to avoid potatoes although they love them, because they believe they contain a lot of carbohydrates, making them put on that extra kilo. However, I must tell you this is a big myth. Did you know they are actually less caloric than a low-fat yoghurt?

Potatoes should definitely belong to our weekly menu for their positive benefits to our health. They contain a lot of water, simillarly as watermelon, up to 80%. They are very rich in minerals, C vitamine and B vitamines.

Regular consumption of potatoes is associated with positive effect on our body - especially heart, stomach, degestion and immune system.

Let´s now have a look at the recipe.

We will need (1 portion):

- 300 g of new potatoes
- 3 slices of butter
- fresh parsley
- salt
- olive oil and sunflower oil

Directions:

Cook the potatoes in water, but not too long, they should actually be a little hard, after they are cooked, peel them off, cut in pieces and fry on oil. Add slices of butter and salt, mix it all and finally add fresh parsley. Serve with fresh raw vegetable.
